Curry Chicken Soup

Ingredients for two persons:

  • Six dl of water
  • One stock cube
  • Two small chicken fillet, finely diced
  • Three potatoes
  • Half an onion, sliced
  • Two cloves of garlic, finely sliced
  • One and a half tablespoon fresh ginger, finely diced
  • Cream, low fat is ok
  • Rape oil
  • Olive oil
  • Red pepper powder
  • Coriander, just a little
  • Cayenne pepper, not to much though
  • Curry, pretty much of it too
  • Salt and pepper
Let the onion and garlic fizzle for a while in a saucepan. Remove the two from the saucepan and pour in the water instead. Add the stock cube and the potatoes and let it boil for 15 minutes or so; the potatoes should not be done. Add the rest of the ingredients and species except for the onion, garlic and ginger. Add those three just before the soup is done, which is pretty much when the potatoes and chicken are ready. This should take 5-10 minutes or so. Serve while hot.
